Rice types
Worldwide, there are more than 40,000 different varieties of rice. Often times, rice is categorized by its size as being either short grain, medium grain or long grain. Another way of classification is according to the degree of milling that it undergoes. This is what makes brown rice different from white rice.
Thus, the most important differences between varieties of rice are their cooking characteristics, shapes, colors and, in some cases, a subtle flavor difference.
Aromatic Rice
Aromatic rice or Specialty rice is a general term used for rice having a flavor and aroma similar to that of roasted nuts or popcorn. The natural compound that gives this unique grain the characteristic aroma and flavor is present in all types of rice, but in the special varieties it is present in much higher concentrations. These types of rice are generally medium to long-grain and have a light, fluffy texture when cooked. The varieties of aromatic rice include: Basmati, Jasmine, Texmati, Wehani and Wild Pecan. Jasmine rice has long, translucent grains. When cooked, it has a seductive, slightly floral aroma and a soft, clingy texture. Wehani rice is a reddish-brown hybrid of basmati and long-grain brown rice.

It is known to be an excellent remedy for balancing ones metabolism and energy production. Basmati is gluten free, low in fat, it contains all eight essential amino-acids, folic acid, is very low in sodium and has no cholesterol. Also, it has a low to medium glycemic index, meaning that energy is released at a slower, steadier rate, leading to a more balanced level of energy.
Reputation for being delicate and difficult to grow
Producing just one crop each year, this plant requires specific weather conditions. Being taller than other types of rice, Basmati is exposed to wind damage, which makes it difficult to reach maturity. The climate, soil and farming methods can all affect the quality of the grain, that is why this type, more than the others, needs constant care and affection.
