Rice types

Worldwide, there are more than 40,000 different varieties of rice. Often times, rice is categorized by its size as being either short grain, medium grain or long grain. Another way of classification is according to the degree of milling that it undergoes. This is what makes brown rice different from white rice.
Thus, the most important differences between varieties of rice are their cooking characteristics, shapes, colors and, in some cases, a subtle flavor difference.

Black Rice

This type of rice cooks up with a dark color and is sometimes mixed with white glutinous rice in recipes. Black Rice is actually more purplish in color, rather than black, although when uncooked it has a dark appearance. High in nutritional value, black rice is rich in iron and fiber.


A variety of rice sometimes known as "forbidden rice", because, in the past, only emperors were allowed to eat it, black rice is still relatively rare in the West. Both black and brown rice retain many of the nutrients lost by white rice during processing, but black rice is believed to be superior to brown varieties.
Because of its flavor and texture, it is often used in sweet puddings and breakfast dishes and contains the bran coating, requiring a longer cooking time as well.
