Rice types
Worldwide, there are more than 40,000 different varieties of rice. Often times, rice is categorized by its size as being either short grain, medium grain or long grain. Another way of classification is according to the degree of milling that it undergoes. This is what makes brown rice different from white rice.
Thus, the most important differences between varieties of rice are their cooking characteristics, shapes, colors and, in some cases, a subtle flavor difference.
Integral
Brown Rice enjoys great popularity thanks to its full flavor and nutritional benefits. This grain gets its characteristic chewy texture because the nutritious bran layer is not removed at milling. This is also why it takes longer to cook than white rice. Since the outer layers have not been removed, this type of rice takes longer to cook; it is chewier in texture and has a nutty flavor to it.
It is recommended to soak the rice for one hour before cooking and then boil it for 20 minutes, using 2 ½ cups of water to 1 cup of brown rice. Because of these properties, it is especially suitable for stuffings, pilafs, casseroles, deserts and stir-fry dishes.
