Rice types
Worldwide, there are more than 40,000 different varieties of rice. Often times, rice is categorized by its size as being either short grain, medium grain or long grain. Another way of classification is according to the degree of milling that it undergoes. This is what makes brown rice different from white rice.
Thus, the most important differences between varieties of rice are their cooking characteristics, shapes, colors and, in some cases, a subtle flavor difference.
Parboiled rice
Parboiled rice has a slightly fuller flavor and, unlike regular white rice, which is milled directly from the field, it is steamed under pressure before milling. This process gives the rice special properties: it hardens the grain, reducing the possibility of over-cooking. It also helps to retain much of the natural vitamin and mineral content present in the milled layers. This process makes the rice extra fluffy without sacrificing any of its nutrients.
When raw, the rice has a nice golden color, but turns white after cooking. Also, it takes longer to cook than regular rice, at least 16 minutes, with 2 cups of water to 1 cup of rice. It can be used as an ingredient for the same dishes as regular long grain, but it is also perfect for rice salads.
