Ingredients 250g bamboo buds, from the can, well drained 1 chicken breast (approximately 250g), without skin or bones, sliced 1 small onion, finely chopped 1 tablespoon of oil 1 tablespoon of oyster sauce 3 tablespoons of soy sauce 2 teaspoon of brown sugar 1 teaspoon of lime juice 2 cm ginger piece, finely chopped 2 teaspoons of chili pepper paste (or ½ red chili pepper, crushed) 3 cloves of garlic, finely chopped 1 red capsicum, sliced ½ carrot, sliced 7 cm cucumber piece, seeds removed, finely sliced Fresh coriander leaves (or parsley), for garnishing Riso Scotti Easy Cook Thai Rice
Instructions Prepare the rice according to the instructions on the pack. Heat the oil in a wok. Add the onion and stir-fry (rapid fry, at high heat, stirring constantly) for 1 minute. Add the garlic, ginger and chili pepper paste. Continue for another 2 minutes. Add the meat, lime juice, soy sauce and oyster sauce, sugar and bamboo buds. Continue cooking for another 3 minutes. Add the capsicum, cucumber and carrot and continue, stirring, for another 1-2 minutes. Serve aside boiled rice, garnished with fresh coriander leaves.
