Rice salad with shrimp and apples

Rice salad with shrimp and apples

This recipe uses parboiled shrimp (pink color), but it will have the same delicious taste if you use any other type of cooked meat (fried, boiled or roasted).

Ingredients
200 g Riso Scotti Bob cu Bob Long Grain Rice
Salt
White pepper
2 apples, peeled and chopped
5 tablespoons of olive oil
200 g boiled shrimp, cut into pieces
2 teaspoons of Dijon mustard
2 teaspoons of sugar
2 tablespoons of apple vinegar
Fresh dill, chopped

Instructions
Boil the rice according to the instructions on the pack.
Meanwhile, heat 1 tablespoon of oil and sauté rapidly the apple pieces, for approximately 1-2 minutes. Remove from the pan and absorb the excess oil using paper towels.
Prepare a dressing, mixing in a bowl the rest of the olive oil with the vinegar, sugar, salt, white pepper and mustard, until the sugar dilutes.
Put the rice on 4 individual plates. On top put the apple and shrimp pieces. Sprinkle with sauce and garnish with chopped dill. Serve the salad immediately.
