Rice salad with cherry tomatoes

It is a simple recipe that uses boiled long grain rice. You can use either a combination of wild and parboiled rice, or any other type of rice that does not stick together.

Ingredients
250g Riso Scotti Wild Rice
2 cups of fresh ruccola leaves
4 tablespoons of olive oil
1 tablespoon of balsamic vinegar
1 tablespoon of mustard
2 teaspoons of sugar
Salt
Pepper
1 tablespoon of lemon juice
8 cherry tomatoes, cut in half
2 green onions cut diagonally into pieces

Instructions
Cook the rice according to the instructions written on the pack. Leave it 10-15 minutes to cool.
In a small bowl, combine the lemon juice with the mustard, salt, pepper and sugar. Add the oil, step by step, and stir permanently, until you obtain a solid paste, yellow colored.
In a large bowl, put the ruccola, green onion, tomatoes and the rice. Sprinkle everything with the sauce and stir well.
Taste it and add salt, sugar, pepper and lemon juice, as much as you prefer. Cover it and leave it rest for approximately 10-15 minutes. Serve cold.
