It is an easy recipe that uses boiled long grain rice. You can use any type of boiled rice, on the condition that the beads do not stick together.
Ingredients 250g Riso Scotti Easy Cook Basmati Rice 1 cup of mix salad leaves 1 tablespoon of white wine, flavored 4 tablespoons of olive oil 1 tablespoon of white wine vinegar 2 teaspoons of sugar 4 dried apricots, chopped 4 cherry tomatoes cut in half Salt White ground pepper 1 tablespoon of lemon juice 2 tablespoons of big, black raisins Dried oregano
Instructions Cook the rice according to the instructions on the pack. Transfer it on a plate and leave it until it reaches a constant temperature. In a small bowl, mix the lemon juice with the mustard, salt, pepper and sugar. Add the oil step by step and stir permanently, until you obtain a solid paste, yellow colored. Add the wine and stir well. In a large bowl, combine the salad mix with the rice, cherry tomatoes, dried apricots and raisins. Sprinkle with the sauce and stir well. Cove it and leave it rest for approximately 10-15 minutes. Sprinkle some oregano and serve cold.
