Rice types
Worldwide, there are more than 40,000 different varieties of rice. Often times, rice is categorized by its size as being either short grain, medium grain or long grain. Another way of classification is according to the degree of milling that it undergoes. This is what makes brown rice different from white rice.

Arborio
Arborio rice is a short grain white rice used in Italian recipes for making risotto. This special type is produced in the Italian town of Arborio, located in the Po River Valley, from which it also derives its name.
It expands during cooking and it cooks perfectly, maintaining the centre 'al dente’. It has the ability to absorb liquids well, making it good for rice puddings and baked dishes. The average time for cooking would be 14-15 minutes, but it all depends on the method and recipe that one follows.
